Queso Blanco
This cheese is very popular at parties and family get togethers. Adjust peppers as desired based on personal preference and season.
Ingredients
- 1lb quality white american cheese (Boarshead, Land O Lakes)
- 1/2 cup water
- 1/2 cup whole milk
- 3 to 4 fresh pasilla/pablano chiles
- 2 to 3 fresh jalapeƱos
- 5 to 6 fresh serrano chiles
- 1/2 teaspoon cumin (optional)
Equipment
- Kitchen knife
- Large microwave safe bowl
- Spoon for stirring
- Measuring cups
- Sheet pan
- Foil
Instructions
- Roast chiles on grill or under broiler
- Remove blistered skin from chiles
- Mince roasted chiles
- Cube cheese into 1/2" blocks
- Add cheese, water and milk to microwave safe bowl and microwave on high for 5 to 7 minutes stirring every minute
- Microwave minced chiles for 2 minutes (prevents cold chiles from making the cheese goopy)
- Add chiles to cheese and stir
- Add cumin and stir if desired
Hints
- Instead of a microwave, a crockpot works great as well.
